Victoria Elizondo, chef and owner of Houston’s Cochinita & Co., took over the La Mesa station during lunchtime, serving pollo adobado (chicken) and cochinita pibil (pork) tostaditas with fresh toppings. The pop-up drew enthusiastic diners eager to experience her authentic Mexican cuisine.
